Pickled Eggs

Ingredients

  • 12 eggs
  • 1 garlic
  • 2 tablespoons of salt
  • 2 cups water
  • 2 cups vinegar
  • 1 teaspoon chilli pepper seeds
  • 1 teaspoon dill weed

Instructions

  1. hard boil a dozen eggs
  2. heat all remaining ingredients in a sauce pan
  3. peel the eggs and  place in a jar that has been pre-heated under hot tap water
  4. pour hot – not too hot – brine into jar
  5. allow to cool on counter for 30 minutes
  6. store in fridge ( this method is not suitable for pantry storage)
  7.  wait approximately 2-4 days before eating.
